Peach Cake Recipe
This recipe is more advanced, and it has many steps to it. But that's the best thing about it. A lot can be learned from a recipe that is this complex. Never be afraid to dive right in. The worst that can happen is that you learn something, and that's definitely not a bad thing!
The Ingredients
6 fresh large peaches
1/3 cup of sugar
1/3 cup of artificial sweetener
2 tablespoons of butter
1 cup of flour
1 teaspoon baking of powder
1/2 teaspoon of baking soda
1 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
1/4 teaspoon of salt
1 tablespoon of oil
1 egg OR 1 ripe banana, mashed with 1/2 a teaspoon of baking soda
1 teaspoon of vanilla extract
1 teaspoon of almond extract
1/2 cup lowfat buttermilk OR 1/2 cup milk, any lower calorie variety, mixed with 1 teaspoon white vinegar
The most important part of any recipe is to preheat the oven. Preheat the oven to 357 degrees. Boil a large saucepan of water. Create cross cuts on the and of each peach and then place them into the boiling water. Boil them for 3 minutes, or until the skins are soft. Transfer the peaches to a bowl of cold water so that they can cool. Then take the peaches, peal them, halve them, and remove the pits. Set them aside.
Combine 1/3 cup of sugar and a tablespoon of butter in a medium skillet. Heat these ingredients for up to five minutes, until the sugar begins to melt.
Prepare a 8x8 baking dish by coating with a cooking spray or spreading butter over it. Arrange the peaches in the pan with the cut sides facing upward. Pour the melted sugar over them and set aside.
Now take a medium bowl and combine the flour, baking powder, baking soda, cinnamon, nutmeg and salt and set the bowl aside.
In a larger bowl, use a mixer to beat 1/3 cup of artificial sweetener, 1 tablespoon of butter and oil until they are combined. Add in your egg or egg substitute and beat until it becomes smooth. Beat in the vanilla and almond extract. Lower the speed of the mixer and add in the buttermilk or buttermilk substitute and the flour mixture. Beat all of the ingredients until just combined. It is important not to overbeat everything.
Once batter is complete, pour it over the peaches. Put the pan in the oven and bake for 20-25 minutes or use a toothpick to check if it is baked all the way through.
When the cake is finished, let it cool for a few minutes. Loosen the cake edges by using a knife and flip the pan onto a plate to release the cake. The peach side should be facing upward. Serve!
